Ingredients

  • • 1 lime, juiced (start small, about 2 tablespoons)
  • • 1 can coconut milk (use both the water and solids)
  • 12 oz pineapple juice (adjust to taste)
  • 1/2 can pineapple chunks
  • 2 tablespoons sugar (optional, adjust based on sweetness preference)
  • 1–2 cups ice cubes1/2 cup water (optional, to adjust consistency if needed)

Instructions

  1. Combine Ingredients: In a blender, add the juice of 1.5 limes, the full can of coconut milk, 12 oz of pineapple juice, pineapple chunks, and 2 tablespoons of sugar (if using). Blend until smooth.
  2. Add Ice and Blend: Add the ice cubes and blend again until the drink is creamy and chilled. Adjust the thickness by adding more ice for a thicker texture or a small splash of water to thin it out
  3. Serve and Garnish: Pour into glasses, garnish with a slice of lime or pineapple, and serve immediately.

    Notes

    Ways to Adjust for Taste:

    • If it’s too tart: Add more pineapple juice or a touch of sugar.
    • If it’s too pineapple-forward: Add a bit more coconut milk or water.
